Ingredients:
1 kg of sirloin (or tenderloin), chicken, or pork, sliced
1 large onion, sliced
250g of chopped bacon
3 cloves of garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup of spicy ketchup
1 cup of tomato paste
1/2 tablespoon of salt
1 teaspoon of cumin
1/2 teaspoon of cayenne pepper
1/2 teaspoon of spicy paprika
6 tortillas 25cm
Instructions:
In a pan, fry the bacon, then add the onion and let it golden.
Add garlic and the choice of meat (beef, chicken, or pork) and let it sauté.
Add the bell peppers and sauté for a few more minutes.
Add the ketchup, tomato paste, salt, cumin, cayenne pepper, and paprika.
Assembly:
Take a 25cm* tortilla.
Spread 2 tablespoons of mashed beans lengthwise on the tortilla, but don’t reach the edge.
Place the chosen protein (beef, chicken, or pork) on top of the beans.
Add a little pico de gallo.
Cover with 3 or 4 slices of mozzarella and 3 or 4 slices of cheddar (you can also use cheddar from a tube).
Fold the tortilla by folding the sides in and then rolling it up like a pancake.
Toast it in a pan or preferably in the oven until the tortilla is warm and crispy, and the cheeses melt.
Put a teaspoon of sour cream (see recipe in Preparations) on each side of the burrito and sprinkle crispy onions on top as shown in the photo.
(*) To make the burrito in the photo, you need a tortilla with a diameter of at least 25cm, but you can also make it with a smaller tortilla and roll it up.
